  • 1 ½ cups brown sugar
  • 1 cup cold butter, sliced
  • 1 ½ cups oats
  • 2 (8 oz.) packages cream cheese, room temperature
  • ½ cup sugar
  • 3 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a food processor, pulse flour and brown sugar until combined. Add cold butter slices and pulse until crumbly. Mix in oats.
  3. Reserve 1 ½ cups of the mixture for topping; press the rest into the bottom of the pan.
  4. Bake crust for about 10 minutes until golden.
  5. In a mixing bowl, beat cream cheese and sugar until smooth; add eggs one at a time, then mix in milk, vanilla extract, lemon juice, and zest.
  6. Pour cheesecake mixture over baked crust; sprinkle reserved crumble on top.
  7. Bake for an additional 15-20 minutes until lightly browned.
  8. Cool completely in the pan before cutting into bars.
