Ingredients

Scale
  • 2 large chicken breasts (2 pounds total), sliced into thin cutlets
  • Kosher salt and coarsely ground pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, minced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1 cup half-and-half
  • 1/4 cup fresh lemon juice (from 12 lemons)
  • 1 teaspoon lemon pepper seasoning
  • Fresh parsley or basil for garnish

Instructions

  1. Season the chicken cutlets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 5-7 minutes per side until fully cooked (165°F internal temperature). Remove from skillet and set aside.
  3. Lower the heat to medium-low, add butter to the skillet, and sauté shallots for 1-2 minutes, then add garlic for another minute.
  4. Stir in flour for about 2 minutes, then gradually add chicken broth. Mix in half-and-half and bring to a gentle boil; simmer until thickened.
  5. Add lemon juice and lemon pepper seasoning; return the chicken to the skillet to coat in the sauce.
  6. Garnish with fresh herbs before serving warm.
