  • 12 oz whole wheat pasta (penne or tortiglioni)
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth (or reserved pasta water)
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Cook chicken pieces until golden brown and fully cooked, about 6-8 minutes. Remove chicken from skillet.
  3. In the same skillet, sauté garlic until fragrant. Lower heat and stir in ricotta, Parmesan, chicken broth, salt, and pepper until smooth.
  4. Return chicken to the skillet; add cooked pasta and toss to combine. Adjust consistency with reserved pasta water if needed.
  5. Stir in optional fresh spinach or kale until wilted.
