  • 1 cup long-grain white rice
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • chicken broth
  • garlic powder
  • onion powder
  • smoked paprika
  • thyme

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. In a large skillet, heat olive oil over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove from skillet.
  2. In a medium saucepan, boil chicken broth and salt, then add rice. Cover and simmer for 15-18 minutes until tender.
  3. In the same skillet, melt butter over medium heat. Whisk in flour until golden, then gradually whisk in milk and chicken broth to create a smooth sauce. Stir in spices and cheeses until melted.
  4. Return chicken to the skillet, cover with sauce and simmer on low for 10 minutes until cooked through.
  5. Serve over the cooked rice and garnish with fresh parsley.
