  • 3 cups cooked, shredded chicken
  • 1 cup Monterey Jack cheese
  • 1 cup cheddar cheese
  • 1 small onion
  • 2 cloves garlic
  • 4 tablespoons unsalted butter
  • 4 tablespoons flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 12 small tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, melt butter over medium heat. Add diced onion and minced garlic; sauté until softened.
  3. Stir in flour until smooth; gradually add chicken broth while whisking until combined. Bring to a simmer, then mix in sour cream, diced green chilies, spices, salt, and pepper.
  4. Spread some sauce on the bottom of a greased baking dish. Fill tortillas with shredded chicken and cheese mixture; roll tightly and place seam-side down in the dish. Pour remaining sauce on top and sprinkle with more cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until bubbly.
