  • 2 lbs Yukon Gold or Russet potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • Salt and pepper to taste
  • Optional: Grated Parmesan cheese for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in the baking dish and drizzle with half of the glaze.
  4. Add the remaining potato slices and pour the rest of the glaze over them. Compact gently.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil, add Parmesan if desired, and bake uncovered for an additional 15–20 minutes until golden brown.
  7. Allow to cool slightly before slicing into wedges and serving warm.
