  • 8 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • ¾ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup honey
  • 3 tablespoons minced garlic
  • Salt and pepper to taste
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ¼ teaspoon dried mustard
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a cast iron skillet over medium-high heat. Season chicken thighs with salt and pepper and sear skin side down until golden brown.
  2. Transfer the seared chicken to a crock pot skin side up.
  3. In a medium bowl, whisk together ketchup, soy sauce, honey, minced garlic, onion powder, thyme, parsley, and dried mustard until well combined.
  4. Pour the sauce over chicken thighs in the crock pot. Cover and cook on HIGH for 3 hours or LOW for 5 hours until fully cooked and tender.
  5. Serve the chicken with some sauce spooned over the top and garnish with fresh parsley if desired.
