  • 1 lb dry navy beans
  • 12 oz applewood smoked bacon
  • 1 sweet onion
  • 3 cloves garlic
  • 2 cups chicken stock
  • 1 cup bourbon (optional)
  • 3/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 2 tablespoons molasses
  • 3 tablespoons pure maple syrup
  • 1/2 cup brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon ground cumin

Instructions

  1. Soak the navy beans overnight in a large pot of water. Drain and rinse before use.
  2. In a skillet, cook chopped bacon over medium heat until crisp. Remove and drain on paper towels.
  3. Sauté onions in the same skillet until caramelized, then add minced garlic and cook until fragrant.
  4. In the pot used for soaking beans, combine chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, maple syrup, brown sugar, smoked paprika, and cumin. Bring to a boil.
  5. Add soaked beans to the mixture and return to a boil before transferring everything to your crockpot.
  6. Stir in the cooked bacon along with sautéed onions and garlic into the crockpot. Cook on high for 5-6 hours or low for 10-12 hours.
  7. Allow to rest on warm for up to an hour before serving to thicken.
