  • 2 pounds Russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter, divided
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 large egg yolks
  • Salt and black pepper to taste

Instructions

  1. Peel and chop the potatoes into even pieces. Boil in salted water until fork-tender (15-20 minutes). Drain well.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Mash the drained potatoes until smooth using a potato masher or ricer.
  4. Mix in melted butter, warm cream, Parmesan cheese, salt, pepper, and egg yolks until smooth.
  5. Transfer the mixture to a piping bag fitted with a star tip and pipe mounds onto the baking sheet.
  6. Brush each mound with remaining melted butter and bake for 15-20 minutes until golden brown.
