  • 1 lb ground beef
  • 1 head of cabbage, thinly sliced
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup coconut aminos
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon avocado oil (or preferred cooking oil)
  • 1/2 cup shredded carrot
  • Salt & pepper, to taste
  • Green onion slices and sesame seeds for garnish

Instructions

  1. In a small bowl, whisk together coconut aminos, rice vinegar, sesame oil, and red pepper flakes for the sauce. Set aside.
  2. Heat avocado oil in a skillet over medium-high heat. Add chopped onion; cook for about 5 minutes until translucent.
  3. Stir in minced garlic and grated ginger for 1 minute until fragrant.
  4. Add ground beef to the skillet; cook until browned (about 5 minutes), breaking it up with a wooden spoon.
  5. Mix in sliced cabbage and carrots along with the sauce; cook until cabbage wilts (about 5 minutes).
  6. Taste and adjust seasoning with salt and pepper as needed. Serve warm garnished with green onions and sesame seeds.
