  • 2 ½ pounds russet or Yukon gold potatoes
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme
  • 3 cups cheddar cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice potatoes thinly (⅛ to ¼-inch thick). In a saucepan, melt butter over medium heat; sauté onions for 3 minutes until softened. Add garlic and thyme; cook for another minute.
  3. Stir in flour and then slowly add heavy cream while stirring to avoid lumps. Season with salt, pepper, and cayenne pepper if desired. Mix in 2 cups of cheddar cheese until melted.
  4. Grease a baking dish and layer half of the sliced potatoes followed by half of the cheese sauce and cheese. Repeat layers with remaining ingredients.
  5. Cover with foil and bake for 40 minutes; remove foil, top with remaining cheese, and bake for an additional 20 minutes until bubbly.
