  • 2 servings dry instant ramen noodle cakes (about 140 g)
  • 10 oz extra firm tofu or assorted vegetables/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 2 tbsp rice vinegar or lemon juice
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil

Instructions

  1. In a mixing bowl, combine sauce ingredients: water/broth, soy sauce, corn starch, rice vinegar, chili garlic sauce, and sesame oil.
  2. Boil water in a small pot; cook the ramen noodles until chewy (about 2-3 minutes less than package instructions). Drain and set aside.
  3. Sauté sliced tofu or vegetables in a pan over medium-high heat until cooked.
  4. Pour the prepared sauce into the pan with sautéed ingredients; simmer for 2-3 minutes until slightly thickened.
  5. Add drained noodles to the pan; mix well to coat with sauce and cook for an additional 3 minutes.
  6. Adjust seasoning if needed before serving. Garnish with chopped scallions and sesame seeds.
