  • 1 small yellow onion, diced
  • 2 tablespoons taco seasoning
  • 1 can petite diced tomatoes (14.5 ounces), drained
  • 1 can refried beans (16 ounces)
  • 1 bag frozen tater tots (16 ounces)
  • 8 ounces sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef with the diced onion until the beef is cooked through; drain excess fat.
  3. Stir in taco seasoning and diced tomatoes; simmer on low for about 5 minutes.
  4. Spread refried beans in the bottom of the baking dish, layer with tater tots, then add the beef mixture on top.
  5. Sprinkle shredded cheddar cheese over the entire dish.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
