Fireworks Cupcakes are the ultimate festive treat to brighten your 4th of July celebrations! These colorful cupcakes feature a fluffy vanilla cake base layered in vibrant red, white, and blue, topped with smooth buttercream frosting and festive decorations.

  • 1/2 cup Butter (room temperature)
  • 2 cups Granulated White Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 Large Eggs
  • 1 1/4 cup Milk
  • 2 3/4 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3 ounces Red Gelatin Powder (Cherry or Strawberry)
  • 3 ounces Blue Gelatin Powder (Berry)
  • For Frosting: 1 cup Butter, 5 cups Confectioners' Sugar, Red and Blue Icing Gel

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  3. In another bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture alternately with milk.
  4. Divide batter into three bowls; mix red gelatin into one bowl, blue into another, leaving one plain.
  5. Spoon layers of red, white, and blue batter into each cupcake liner.
  6. Bake for about 18 minutes until a toothpick comes out clean. Cool completely.
  7. Beat together frosting ingredients and frost cooled cupcakes.
