  • 6 cups fresh cherries, pitted
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 and 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold & cubed
  • 1/4 cup cold water
  • 1 large egg (for egg wash)
  • Additional sugar for sprinkling

Instructions

  1. In a saucepan over medium heat, combine cherries, lemon juice, vanilla extract, sugar, cornstarch, and salt. Simmer until thickened (about 10 minutes). Let cool.
  2. Preheat oven to 425°F (220°C) and prepare a 9-inch pie plate.
  3. In a bowl, whisk together flour and sugar; cut in cold butter until crumbly. Gradually add cold water and mix until combined. Divide dough into two balls and chill for at least 30 minutes.
  4. Roll out one dough disc to fit the pie plate; fill with cooled cherry mixture.
  5. Roll out the second disc for the top crust; vent with slits and apply an egg wash with sugar on top.
  6. Bake for about 60 minutes until golden brown.
