  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 3 tablespoons unsalted butter, softened to room temperature
  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. Prepare the cookie dough by whisking flour, cornstarch, baking powder, and salt in one bowl. In another bowl, beat together softened butter and sugar until creamy. Add the egg and vanilla.
  2. Combine dry ingredients with wet ingredients until fully mixed. Chill the dough for at least 20 minutes.
  3. Preheat the oven to 350°F (177°C) and press the dough into a greased pizza pan, baking for 17–19 minutes until lightly browned. Allow to cool completely.
  4. Make the cream cheese frosting by beating softened cream cheese with butter and confectioners’ sugar until smooth.
  5. Spread frosting over cooled crust and top generously with sliced fresh fruit.
