  • 1 ¼ cups dark chocolate, chopped
  • ¼ cup butter, salted or unsalted
  • 2 eggs (room temperature)
  • ¾ cup caster sugar
  • ½ cup demerara sugar
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (dark or milk)

Instructions

  1. Preheat your oven to 160ºC (320ºF) for fan or 170ºC (338ºF) for conventional baking. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water until smooth; stir in vanilla extract.
  3. In a medium bowl, whisk eggs with caster and demerara sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, salt, and chocolate chips in another bowl.
  5. Gently fold the melted chocolate mixture into the egg mixture before adding dry ingredients; mix until just combined.
  6. Scoop tablespoons of batter onto the prepared baking tray and bake for 12-14 minutes until tops are crackly.
  7. Cool on the tray for about 10 minutes before transferring to a wire rack.
