  • 1 lb Yukon gold potatoes, cut into ½-inch cubes
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½-inch cubes
  • ¼ cup ghee or butter, divided
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat a cast-iron skillet over medium heat and add olive oil and 2 tablespoons of ghee.
  2. Cook the diced potatoes with minced garlic, thyme, oregano, salt, and pepper for about 10 minutes until golden brown; remove and set aside.
  3. Increase heat to medium-high, add remaining ghee, then sear seasoned steak cubes for about 3 minutes until browned.
  4. Combine the cooked potatoes with the steak in the skillet, adjusting seasoning as needed.
  5. Garnish with fresh parsley before serving.
