  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic
  • ⅓ cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, season chicken with Italian seasoning, smoked paprika, salt, black pepper, and olive oil.
  3. In another bowl, toss halved potatoes with olive oil, minced garlic, salt, black pepper, and Parmesan cheese until well-coated.
  4. Arrange chicken on one side of a baking sheet and potatoes on the other.
  5. Bake for about 30 minutes until the chicken reaches an internal temperature of 165°F (75°C). Stir halfway through cooking.
