  • 1.5 lb skinless, boneless chicken thighs
  • 2 tablespoons olive oil (for cooking)
  • 8 oz grape tomatoes
  • 5 cloves garlic
  • 2 cups cooked jasmine rice
  • 15 oz canned chickpeas
  • 5 oz fresh spinach
  • 6 oz feta cheese

Instructions

  1. Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a skillet over medium heat and cook chicken for 10 minutes until done.
  2. In the same skillet, sauté half of the grape tomatoes with minced garlic for 2 minutes. Stir in spinach until wilted then add rice and chickpeas along with lemon juice.
  3. Mix half of the feta cheese with olive oil and lemon juice in a bowl. Fold it into the rice mixture.
  4. Slice cooked chicken thighs and combine them into the skillet. Top with remaining feta cheese before serving.
