  • 4 small chicken breasts (1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice and zest
  • 2 cups cooked rice or quinoa
  • 2 cups halved cherry tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • Tzatziki sauce made with Greek yogurt

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes. Pound the chicken to about 1/2 inch thick and marinate for at least 30 minutes.
  2. Prepare the tzatziki: In another bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill until smooth.
  3. Cook the chicken: Air fry at 380°F for about 10–12 minutes or sauté in a skillet until golden brown and cooked through.
  4. Assemble your bowls: Layer cooked rice/quinoa at the bottom followed by veggies and sliced chicken. Top with tzatziki and drizzle with olive oil if desired.
