  • 1½ cups long grain white rice
  • pounds boneless skinless chicken strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 pinch salt
  • 1 pinch black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 8 corn tortillas
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 tablespoon chopped fresh cilantro
  • ½ medium lime (juiced)

Instructions

  1. Rinse the rice under cold water. In a saucepan, cook it with 3 cups of water and a pinch of salt until tender. Stir in lime juice and cilantro.
  2. For the chicken marinade, mix olive oil, chili powder, salt, pepper, garlic powder, and oregano in a bowl. Coat the chicken strips and let them marinate for at least 10 minutes.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for 6–8 minutes on each side until cooked through (internal temperature of 165°F). Slice once rested.
  4. Prepare your toppings by chopping vegetables like bell pepper, onion, jalapenos, and avocado.
  5. In serving bowls, layer the rice followed by sliced chicken and desired toppings such as corn, salsa, sour cream, and cilantro.
