  • 1 tsp black pepper
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 shallot (chopped)
  • 6 cloves garlic (minced)
  • 2 springs rosemary (chopped)
  • 1/4 cup parsley (chopped)
  • 1/4 cup tarragon (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mint (chopped)
  • 2 lemons (juice of)
  • 1/4 tsp smoked paprika

Instructions

  1. Pat dry the steaks and season with salt and pepper; let rest.
  2. Preheat your grill until briquettes are hot.
  3. In a pan, melt butter and olive oil; sauté shallots and garlic until fragrant. Stir in chopped herbs, lemon juice, remaining salt, pepper, and smoked paprika.
  4. Grill steaks over direct heat for 4 minutes per side, then move to indirect heat until reaching an internal temperature of 135°F (medium).
  5. Rest the steaks for 10 minutes before slicing against the grain and serving with lemon-herb sauce.
