  • ½ pint colorful cherry tomatoes
  • 8 ounces fresh mozzarella cheese
  • Fresh basil leaves
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 garlic cloves (minced)
  • 2 teaspoons sugar-free maple syrup
  • 1 ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • ⅛ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare zucchini by trimming ends and slicing into ½-inch thick rounds. Pat dry with paper towels to remove excess moisture.
  2. Heat grill pan over medium-high heat. Brush with oil and grill zucchini for 2-3 minutes per side until charred.
  3. Sprinkle grilled zucchini with salt and set aside to cool slightly.
  4. In a mixing bowl, whisk together dressing ingredients: olive oil, vinegar, minced garlic, maple syrup, salt, black pepper, and optional red pepper flakes.
