  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp olive oil
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh grated parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • 1 serving Barilla protein+ pasta

Instructions

  1. 1. Preheat a nonstick pan over medium heat.
  2. 2. Season salmon with salt and pepper, then cook skin-side down in olive oil for 4–5 minutes per side until golden brown.
  3. 3. Remove salmon and sauté garlic in butter until fragrant. Add spinach, cherry tomatoes, sun-dried tomatoes, salt, and pepper; mix well.
  4. 4. Combine cornstarch with milk until smooth; stir into the pan until thickened, then add parmesan cheese.
