  • 3/4 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 cup cottage cheese
  • 1/3 cup plain Greek yogurt
  • 2 tbsp cream cheese
  • 2 tbsp sugar-free maple syrup
  • 1 egg
  • 1/4 tsp baking powder
  • 1 scoop PEScience strawberry cheesecake protein powder
  • 3/4 cup frozen strawberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a blender, combine graham cracker crumbs and melted butter; press into the bottom of each muffin liner.
  3. Blend the cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder until smooth.
  4. Pour the cheesecake mixture over the crust and bake for 38-41 minutes until set.
  5. For the topping, heat frozen strawberries in a saucepan until they break down into a sauce.
  6. Allow cheesecakes to cool completely before adding the strawberry topping; chill overnight for best results.
