  • 1 lb chicken tenderloins
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 teaspoons hot sauce
  • Oil for frying

Instructions

  1. In one bowl, mix flour, baking powder, salt, pepper, and garlic powder. In another bowl, whisk together buttermilk, egg, and hot sauce.
  2. Heat oil in a heavy-bottom skillet to 325°F.
  3. Dredge each tenderloin in the flour mixture, dip into the buttermilk mixture, then back into the flour for a double coating.
  4. Fry tenders in batches for 3-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Place on a wire rack to drain excess oil.
