  • 12 ounces milk chocolate
  • 2 tablespoons coconut oil
  • 1 cup marshmallow fluff (store-bought or homemade)
  • 1/3 cup unsweetened flaked coconut, chopped

Instructions

  1. Line a standard 12-cup muffin tin with paper liners.
  2. Melt the milk chocolate and coconut oil together using a double boiler or microwave in 30-second intervals until smooth.
  3. Spoon 1 to 1½ tablespoons of melted chocolate into each liner and spread it up the sides. Sprinkle with chopped coconut. Chill for 20 minutes.
  4. Add about 1½ tablespoons of marshmallow fluff to each cup, top with more coconut, and chill for an additional 20 minutes.
  5. Re-melt any leftover chocolate and cover the tops of each cup before chilling again for about 20 minutes until set.
