  • 12 ounces milk chocolate
  • 2 tablespoons coconut oil
  • 1 cup marshmallow fluff (store-bought or homemade)
  • 1/3 cup unsweetened flaked coconut
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 2/3 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a muffin tin with paper liners.
  2. Melt milk chocolate and coconut oil in a double boiler or microwave until smooth.
  3. Spoon melted chocolate into each muffin liner, spreading it up the sides. Add chopped coconut on top and chill for 20 minutes.
  4. Fill each chocolate cup with marshmallow fluff and sprinkle remaining coconut; chill for another 20 minutes.
  5. Cover the cups with remaining melted chocolate and chill again until set.
