  • 3 ¾ cups cake flour (or 3 cups all-purpose flour)
  • 2 cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon fine sea salt
  • 1 cup unsalted butter (room temperature)
  • 1 ½ cups buttermilk (room temperature)
  • 1 tablespoon pure vanilla extract
  • 3 large eggs (room temperature)
  • 2 large egg whites (room temperature)

Instructions

  1. Preheat your oven to 350°F. Line two 9-inch cake pans with parchment paper and spray only the parchment with nonstick spray.
  2. In a stand mixer, combine flour, sugar, baking powder, and salt. Mix well.
  3. Add butter and mix on medium speed until coarse.
  4. Lower speed and add buttermilk and vanilla; mix until combined.
  5. Gradually add eggs and egg whites one at a time, mixing well after each addition.
  6. Divide the batter between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for five minutes before transferring to a wire rack to cool completely.
