  • 1 tablespoon baking powder
  • ½ teaspoon fine sea salt
  • 1 cup unsalted butter, at room temperature
  • 1 ½ cups buttermilk, at room temperature
  • 1 tablespoon pure vanilla extract
  • 3 large eggs, at room temperature
  • 2 large egg whites, at room temperature

Instructions

  1. Preheat oven to 350°F and prepare two 9-inch round cake pans by lining them with parchment paper and spraying the parchment with nonstick spray.
  2. In a stand mixer fitted with a paddle attachment, combine flour, sugar, baking powder, and salt on medium speed until well mixed.
  3. Add room-temperature butter and beat for about one minute until the mixture has a coarse texture.
  4. Gradually mix in buttermilk and vanilla extract on low speed until combined. Increase speed to medium and beat for an additional 30 seconds.
  5. Add eggs one by one, mixing after each addition until fully incorporated. Finally, add egg whites and mix on medium-high speed until smooth.
  6. Divide the batter evenly between prepared pans and smooth out the tops. Bake for 25 to 30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Cool cakes in pans for about five minutes before transferring them to a wire rack to cool completely.
