  • ½ teaspoon salt

Instructions

  1. Boil diced potatoes in salted water for about 8 minutes until just tender. Drain well.
  2. Preheat oven to 400°F (200°C) and place an oiled baking sheet inside to heat.
  3. Spread the drained potatoes on the hot baking sheet and drizzle with olive oil; season with salt and pepper. Roast for 30 minutes, flipping halfway through.
  4. Cook bacon in a skillet until crispy; add garlic and cook for another minute before stirring in honey.
  5. Pour the honey-bacon mixture over the roasted potatoes and toss gently; return to the oven for another 10–15 minutes until caramelized.
