  • 8 chicken thighs (skinless and boneless)
  • 2 tbsp cornflour (cornstarch)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp fresh parsley, finely chopped
  • ½ tsp chili flakes
  • Boiled rice

Instructions

  1. Toss chicken thighs with cornflour, salt, and pepper in a mixing bowl until coated.
  2. Heat vegetable oil in a skillet over high heat. Add the chicken thighs and cook until golden brown, about 4-5 minutes per side.
  3. Once cooked, add butter and minced garlic to the pan; reduce heat to medium.
  4. In a separate bowl, combine honey, chicken stock, rice vinegar, and soy sauce. Pour over the chicken in the skillet.
  5. Bring to a boil; reduce heat and simmer for 4-5 minutes until the sauce thickens.
  6. Serve hot over boiled rice garnished with parsley and chili flakes.
