  • 1 tablespoon avocado oil
  • 1 ¼ pounds boneless, skinless chicken breasts
  • ⅓ cup honey
  • 23 tablespoons sriracha (or any hot sauce)
  • 2 medium zucchini
  • 1 medium summer squash
  • 1 ½ cups shredded carrots
  • 2 cups cooked rice (or quinoa)
  • 1 medium avocado

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat avocado oil in a cast iron skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side until browned.
  3. In a bowl, whisk together honey, sriracha, minced garlic, salt, pepper, and optional spices.
  4. Remove chicken and sauté zucchini and summer squash for 1-2 minutes in the same skillet.
  5. Layer shredded carrots over veggies, place chicken on top, and coat with remaining hot honey sauce.
  6. Bake in the oven for about 15 minutes or until chicken is fully cooked.
  7. Let it rest for 5 minutes before cutting into cubes and tossing with reserved sauce.
  8. Assemble bowls with rice or quinoa topped with sautéed veggies and chicken. Drizzle with extra hot honey sauce if desired.
