  • 35 pound boneless beef chuck roast
  • 1 tablespoon oil
  • 4 cups beef broth
  • 1 pound baby red potatoes
  • 4 large carrots (or 1 pound baby carrots)
  • 1 large yellow onion
  • Seasonings: salt, onion powder, garlic powder, black pepper, smoked paprika (optional)
  • 2 tablespoons Worcestershire sauce

Instructions

  1. Season the roast with salt, onion powder, garlic powder, black pepper, and smoked paprika.
  2. Sear the roast in the Instant Pot on the Sauté setting until browned on all sides.
  3. Deglaze the pot with beef broth and Worcestershire sauce.
  4. Return the roast to the pot and add potatoes, carrots, and onions.
  5. Close the lid and set to Pressure Cook for 60 minutes (3 lb) or 80-90 minutes (4-5 lb).
  6. Allow natural pressure release for 10 minutes before performing a quick release.
  7. Shred the meat and serve with gravy made from drippings.
