  • 1 pound ground turkey or chicken sausage
  • 1 large yellow onion
  • 3 medium carrots
  • 2 celery ribs
  • 4 cloves garlic
  • 5 cups low sodium chicken broth
  • 1 can cannellini beans
  • 1 can red kidney beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • Dried pasta (elbow macaroni or ditalini)
  • Fresh herbs (rosemary, thyme)
  • Freshly grated Parmigiano-Reggiano cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat and cook the sausage until browned.
  2. Add diced onion, carrots, celery, rosemary, thyme, and sauté until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Pour in chicken broth, beans, diced tomatoes, tomato sauce, salt, pepper, and bay leaves; bring to a boil.
  5. Reduce heat to simmer for 5 minutes.
  6. Add pasta and simmer until al dente (9–10 minutes).
  7. Remove bay leaves, stir in Parmesan cheese until melted; adjust thickness with more broth if needed.
