  • 1 cup fresh or frozen raspberries
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons granulated sugar
  • 3 teaspoons instant dry yeast
  • Cinnamon and nutmeg for flavoring

Instructions

  1. Make the jam by cooking raspberries, sugar, cornstarch, and a splash of water in a saucepan until thickened. Set aside to cool.
  2. Prepare the dough by mixing flour, warm milk, vegan butter, sugars, yeast, spices, and salt in a bowl. Knead until smooth and elastic.
  3. Let the dough rise for an hour until doubled in size. Roll out into a rectangle and spread cooled jam over it.
  4. Roll up the dough tightly, slice in half lengthwise to reveal swirls, twist together and place in a loaf tin to rise again.
  5. Bake at 170°C (340°F) for 30–40 minutes until golden brown.
