  • 1 cup raspberries (fresh or frozen)
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons sugar (granulated or coconut)
  • 3 teaspoons instant dry yeast
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. For the jam: Combine raspberries, sugar, cornstarch, and a splash of water in a saucepan. Boil then simmer for 5–10 minutes until thickened. Cool before using.
  2. For the dough: In a mixing bowl or stand mixer, mix flour, warm milk, vegan butter, sugar, yeast, spices, and salt until elastic. Let rise covered for 1 hour.
  3. Shape the babka: Roll dough into a rectangle, spread cooled jam over it, roll tightly into a log, slice in half lengthwise to reveal swirls, twist together and place in a lined loaf tin. Let rise again for about an hour.
  4. Bake at 340°F (170°C) for 30–40 minutes until golden.
