  • ½ cup pumpkin seeds
  • 6 cups mixed salad greens
  • 2 cups frisée leaves
  • 12 diced apples or pears
  • 2 sliced avocados
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat)
  • ⅓ cup extra virgin olive oil
  • ¼ cup balsamic or apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toss walnuts and pumpkin seeds with honey and chipotle powder in a mixing bowl. Spread on the baking sheet and toast for about 15 minutes until fragrant.
  3. In a large salad bowl, combine mixed greens and frisée. Top with diced fruits, sliced avocados, pomegranate seeds, nuts, and cheese.
  4. To make the dressing, mix all ingredients in a sealed jar and shake well.
  5. Drizzle dressing over the salad just before serving and toss gently.
