  • 1½ cups walnuts (raw and unsalted)
  • ½ cup pumpkin seeds
  • 6 cups mixed salad greens
  • 2 cups frisée leaves
  • 12 apples or pears (diced)
  • 2 avocados (sliced)
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)
  • ⅓ cup extra virgin olive oil
  • ¼ cup balsamic or apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes, to taste
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, toss walnuts and pumpkin seeds with honey and chipotle powder. Spread on the baking sheet and bake for about 15 minutes until toasted.
  3. In a large bowl, combine mixed greens and frisée. Add diced fruit, sliced avocados, pomegranate seeds, cooled nuts, and crumbled cheese.
  4. For the dressing, shake together olive oil, vinegar, Dijon mustard, honey, fig jam, orange zest, and juice in a sealed jar until well combined.
  5. Just before serving, drizzle dressing over the salad and toss gently.
