  • 5 mini cucumbers (or 23 regular cucumbers)
  • 1 tsp salt
  • 1.5 tsp soy sauce
  • 1 tsp minced garlic
  • 3 tbsp rice vinegar
  • 23 tsp chili oil (to taste)
  • 3 tsp sugar
  • 1 tsp sesame oil
  • Optional: sesame seeds and green onions for garnish

Instructions

  1. In a small bowl, mix minced garlic, sugar, sesame oil, and chili oil with rice vinegar until well combined.
  2. Slice cucumbers thinly or spiralize them for fun shapes. Sprinkle with salt and let sit for 8-12 minutes to draw out moisture.
  3. Rinse salted cucumbers under cold water and pat dry.
  4. Combine cucumbers with the marinade in a mixing bowl, tossing gently to coat.
