  • 12 whole graham crackers
  • 2 tablespoons granulated sugar
  • 8 tablespoons butter (melted)
  • 1 box (3.4 oz) instant lemon pudding
  • 1½ cups half-and-half
  • 8 ounces cream cheese (softened)
  • ½ cup powdered sugar
  • 16 ounces Cool Whip (thawed)
  • 1 can (21 oz) blueberry pie filling

Instructions

  1. Prepare the crust by processing graham crackers and sugar in a food processor until fine crumbs. Slowly add melted butter and mix well. Press into a 9×13 baking pan and freeze for 20 minutes.
  2. For the lemon filling, whisk instant pudding with half-and-half in a bowl and let it thicken for about 5 minutes.
  3. Beat softened cream cheese with powdered sugar until smooth, then blend in the thickened pudding mixture.
  4. Fold in half of the Cool Whip gently to maintain its volume.
  5. Layer the lemon mixture over the chilled crust, followed by blueberry pie filling and remaining Cool Whip on top. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  6. Serve chilled, optionally garnished with crushed graham crackers or fresh blueberries.
