  • 2 cups sugar
  • 2 tablespoons lemon zest
  • 2 large eggs (room temperature)
  • 3 cups all-purpose flour
  • 1 cup lemon juice
  • 3 egg yolks
  • 1½ tablespoons corn starch
  • ¼ cup butter (cold and cubed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together room temperature butter and sugar until light and fluffy. Add lemon zest and eggs, mixing well after each addition.
  3. Stir in vanilla extract, then combine dry ingredients (flour, baking powder, baking soda, salt) until just mixed.
  4. Roll tablespoon-sized balls of dough and create indents with your thumb on each ball.
  5. For the lemon curd, heat lemon juice, egg yolks, and sugar in a saucepan until thickened. Mix in cold butter, corn starch, and lemon zest until smooth.
  6. Fill each cookie indent with lemon curd and bake for about 10 minutes or until edges are lightly golden.
