  • 2 large heads of cauliflower
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese
  • 8 slices bacon
  • 4 green onions
  • Garlic
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam cauliflower florets until tender (about 5-7 minutes). Drain and pat dry.
  3. Mix cream cheese, sour cream, 1 cup cheese, half the bacon and green onions, garlic, salt, and pepper in a bowl until combined.
  4. Fold in steamed cauliflower until evenly coated.
  5. Transfer mixture to the baking dish; top with remaining cheese, bacon, and paprika.
  6. Bake for 20-25 minutes until bubbly and golden brown.
