  • 1 cup dried red kidney beans (soaked overnight)
  • 1 tablespoon oil
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 3 cloves garlic (chopped)
  • 1 teaspoon apple cider vinegar (optional)
  • ½ teaspoon black pepper (or to taste)
  • Salt to taste
  • 1 cup long white grain rice

Instructions

  1. Sauté vegan sausage slices in oil until browned in a large pot.
  2. Add diced onion, celery, and bell pepper; cook until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, garlic, and bay leaves.
  4. Drain soaked beans and add them to the pot; season with black pepper and optional vinegar.
  5. Cover and simmer on medium heat for 1 to 1½ hours until beans are soft.
  6. Cook rice according to package instructions.
  7. Mash some beans against the pot's side to thicken the stew before serving.
