Ingredients

Scale
  • 1 ½ pounds boneless, skinless chicken breast
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Fresh basil, for garnish

Instructions

  1. Cook the penne according to package directions until al dente. Drain and set aside.
  2. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook the chicken until no longer pink (about 6-8 minutes). Remove and set aside.
  3. In the same skillet, melt butter, sauté garlic, then whisk in flour to form a paste. Gradually add chicken broth, cream, and parmesan until smooth. Mix in sun-dried tomatoes and seasonings. Simmer until thickened.
  4. Return chicken and pasta to the skillet; stir to coat everything in sauce. Garnish with fresh basil before serving.
