  • 5 guajillo peppers
  • 23 chiles de árbol (optional)
  • 1 tablespoon olive oil
  • 1 large white onion, chopped
  • 3 large tomatoes, chopped
  • 5 cloves garlic, chopped
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt, or to taste
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes, chopped
  • 4 cups beef stock, divided
  • 3.5 pounds lamb shoulder, or substitute with beef shank or chuck roast

Instructions

  1. Prepare chiles by toasting them lightly in a pan and soaking in hot water until softened.
  2. Cook aromatics: sauté onions, tomatoes, and garlic until tender.
  3. Blend the cooked ingredients with soaked chiles and seasonings to make the sauce.
  4. Marinate the meat in the prepared sauce for at least two hours (overnight preferred).
  5. Cook the marinated meat and sauce with beef stock on medium heat for about three hours until fork-tender.
  6. Serve as a soup with broth or shred for tacos.
