  • 1 cup Biscoff spread (cookie butter)
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • ¾ cup heavy cream (for whipped cream)
  • 2 tablespoons powdered sugar (for whipped cream)
  • ½ teaspoon vanilla extract (for whipped cream)
  • ¾ cup Biscoff spread (cookie butter), melted (for topping)
  • 2 tablespoons Biscoff cookie crumbs (for topping)
  • 12 Biscoff cookies, halved (for garnish)

Instructions

  1. Prepare the crust by mixing Biscoff cookie crumbs, granulated sugar, and melted butter in a bowl. Press into each cup of a mini cheesecake pan.
  2. For the filling, beat together cream cheese, powdered sugar, Biscoff spread, and vanilla until smooth. Fold in whipped heavy cream until fluffy.
  3. Pipe the filling into the crusts and refrigerate for at least 12 hours to set.
  4. For decoration, whip heavy cream with powdered sugar and vanilla until peaks form. Pipe on top before serving.
  5. Drizzle melted Biscoff spread over each cheesecake and garnish with cookie crumbs.
