  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 pkg (8 oz.) cream cheese
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • Assorted fresh fruit

Instructions

  1. In a stand mixer, beat butter and sugar until fluffy. Add egg, yolk, and vanilla; mix well.
  2. Combine flour, salt, and baking powder in another bowl; gradually add to wet ingredients until just mixed. Wrap dough in plastic wrap and chill for at least an hour.
  3. Preheat oven to 350°F. Roll chilled dough to 1/2 inch thick and cut shapes using cookie cutters. Bake for 9-10 minutes until lightly golden.
  4. For frosting, beat cream cheese with sugar and vanilla until smooth.
  5. Spread frosting over cooled cookies and top with fresh fruit as desired.
