  • 1¾ cups granulated sugar
  • ¾ cup salted butter (softened)
  • 4 large eggs (room temperature)
  • 1½ tablespoons vanilla bean paste
  • ⅔ cup buttermilk (room temperature)
  • 6 tablespoons vegetable oil
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 375°F (190°C) and prepare two cupcake pans.
  2. In a mixing bowl, combine cake flour, sugar, baking soda, baking powder, and salt.
  3. Add softened butter and mix until fine crumbs form.
  4. In another bowl, whisk together buttermilk, vegetable oil, eggs, egg yolk, and vanilla.
  5. Gradually add half of the wet mixture to the dry ingredients; beat until smooth.
  6. Add the remaining wet mixture and mix until combined.
  7. Fill cupcake liners two-thirds full with batter.
  8. Bake for 5 minutes at 375°F; then reduce temperature to 350°F (175°C) for an additional 10–12 minutes or until a toothpick comes out clean.
  9. Cool in pans briefly before transferring to a wire rack.
